4 boneless, skinless chicken breasts

Salt and freshly ground black pepper, to taste

2 tablespoons extra virgin olive oil

3 cloves garlic, minced

1 medium onion, finely chopped

1 teaspoon Italian seasoning blend

1 cup low-sodium chicken broth

1 cup heavy cream

2 cups fresh baby spinach leaves

1 cup cherry tomatoes, halved

½ cup freshly grated Parmesan cheese

Fresh basil leaves for garnish

Season the Chicken: Generously season both sides of the chicken breasts with salt and black pepper to enhance the flavor.

    Sear the Chicken: In a large skillet, heat the olive oil over medium-high heat until shimmering. Carefully add the chicken breasts to the skillet and sear them for about 5-6 minutes on each side, or until they are golden brown and cooked through (internal temperature should reach 165°F/74°C). Once cooked, transfer the chicken to a plate and set aside.

      Sauté Aromatics: In the same skillet (do not wipe out the drippings), add the minced garlic and chopped onion. Sauté for approximately 3-4 minutes, stirring frequently, until the onion is translucent and the garlic becomes fragrant.

        Add Seasoning: Sprinkle in the Italian seasoning, stirring for about 30 seconds to release the herbs’ aroma and enhance the dish’s flavor profile.
