Ingredients

4 bone-in, skin-on chicken thighs (approximately 1.5 lbs)

1 cup jasmine rice, thoroughly rinsed

2 cups chicken broth

3 tablespoons olive oil

4 cloves garlic, finely minced

1 medium onion, diced

1 lemon, zested and juiced

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 teaspoon smoked paprika

Salt and black pepper, to taste

Fresh parsley, chopped, for garnish (optional)

Lemon slices, for garnish (optional)

Instructions

Prepare the Chicken: Generously season the chicken thighs with salt, pepper, smoked paprika, dried thyme, and dried rosemary. Carefully rub the spice mixture under the skin of each thigh to enhance flavor infusion.

Sear the Chicken: In a large skillet or frying pan, heat 2 tablespoons of olive oil over medium-high heat. Once hot, place the seasoned chicken thighs skin-side down in the skillet. Sear for about 5-7 minutes until the skin is perfectly golden brown and crispy. Flip the chicken thighs and cook for an additional 3-4 minutes. Once done, remove the chicken from the skillet and set aside on a plate.

Sauté Vegetables: In the same skillet, add the remaining tablespoon of olive oil. Introduce the diced onion and minced garlic, sautéing for 2-3 minutes or until the onion is translucent and fragrant.

Add Rice and Liquid: Stir in the rinsed jasmine rice along with the lemon zest, allowing it to toast for approximately 1 minute in the oil. Carefully pour in the chicken broth and lemon juice, stirring well to combine all ingredients evenly.

Combine Chicken and Cook: Place the seared chicken thighs back into the pan, skin side up, along with any juices that have gathered on the plate. Bring the mixture to a gentle simmer, then cover the skillet with a lid.

Simmer the Dish: Reduce the heat to low and let it simmer for 20-25 minutes, or until the rice is tender and has absorbed most of the liquid. Avoid lifting the lid during this time to ensure even cooking and optimal flavor.

Rest and Fluff: After the cooking time, remove the skillet from heat and let it sit, covered, for an additional 5 minutes. This resting period allows the flavors to meld beautifully. Following this, gently fluff the rice with a fork to separate the grains.

Garnish and Serve: Sprinkle the finished dish with freshly chopped parsley and, if desired, add lemon slices for an extra touch. Serve hot to fully enjoy the vibrant and zesty flavors of lemon and herbs!
