1 medium onion, diced

2 cloves garlic, minced

1 packet (1 oz) taco seasoning

1 cup long-grain rice, rinsed

1 can (15 oz) black beans, drained and rinsed

1 can (14.5 oz) diced tomatoes with green chilies

2 cups chicken or vegetable broth

1 cup corn kernels (fresh, frozen, or canned)

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

2 tablespoons olive oil

Salt and pepper, to taste

Fresh cilantro for garnish (optional)

Sliced jalapeños for garnish (optional)

Sour cream for serving (optional)

Sauté the Aromatics: In a large, deep oven-safe skillet or pot, heat the olive oil over medium heat. Once hot, add the diced onion and sauté for about 3-4 minutes, or until it becomes translucent. Then, stir in the minced garlic and cook for an additional minute until fragrant.

    Brown the Meat: Increase the heat slightly and add the ground beef or turkey to the skillet. Using a spatula, break the meat apart as it cooks. Brown the meat thoroughly, which should take about 5-7 minutes. Once browned, drain any excess fat from the skillet.

      Add Seasoning: Sprinkle the taco seasoning over the browned meat, and stir to evenly incorporate it into the mixture, ensuring all the meat is coated.
