8 ounces uncooked pasta (fusilli or penne recommended)

2 large onions, thinly sliced

4 cloves garlic, minced

4 cups vegetable or beef broth

1 cup heavy cream

1 cup shredded Gruyère cheese

1 tablespoon olive oil

1 tablespoon butter

1 teaspoon sugar (for caramelizing the onions)

1 teaspoon dried thyme

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Optional: ½ cup white wine (for enhanced flavor)

Caramelize the Onions: In a large pot or Dutch oven, combine the olive oil and butter over medium heat. Once melted, add the sliced onions along with the sugar. Cook the onions, stirring occasionally, for approximately 20-25 minutes, or until they are deep golden brown and caramelized. This slow cooking process enriches the dish with flavor, so take your time!

    Incorporate Garlic and Thyme: Once the onions are caramelized, add the minced garlic and dried thyme. Cook for an additional 1-2 minutes until the garlic is fragrant, making sure it doesn’t burn.

      Deglaze the Pot (Optional): If you are including white wine, pour it into the pot now to deglaze, scraping up any tasty brown bits from the bottom. Allow the wine to simmer for 2-3 minutes until it reduces slightly.

        Mix in the Pasta: Add the uncooked pasta to the pot along with the vegetable or beef broth. Stir everything together, ensuring that the pasta is fully submerged in the broth. Season with salt and pepper to taste, then bring the mixture to a boil.
