12 oz spaghetti

1 can (14 oz) diced tomatoes, undrained

3 cups vegetable broth

1 medium onion, finely chopped

3 cloves garlic, minced

1 tsp dried oregano

1 tsp red pepper flakes (adjust according to your spice preference)

1/2 cup heavy cream or coconut cream for a dairy-free option

1/2 cup grated Parmesan cheese (optional; substitute with nutritional yeast for a vegan alternative)

1/4 cup fresh basil, chopped

Salt and black pepper to taste

2 tbsp olive oil

Instructions
 

In a large pot or deep skillet, heat the olive oil over medium heat. Once hot, add the finely chopped onion and sauté for about 5 minutes, or until it becomes translucent and tender.

    Add the minced garlic to the onions and cook for another 1-2 minutes, stirring frequently, until the garlic is fragrant and golden.

      Pour in the uncooked spaghetti, the undrained diced tomatoes, vegetable broth, dried oregano, and red pepper flakes. Stir everything together to ensure the spaghetti is well coated with the liquid.

        Increase the heat to high and bring the mixture to a rolling boil. Once boiling, reduce the heat to medium-low, cover the pot, and let it simmer for approximately 10-12 minutes. Stir occasionally to prevent sticking, and cook until the pasta is al dente and most of the liquid has been absorbed.

          After cooking, remove the pot from the heat. Slowly stir in the heavy cream (or coconut cream) and grated Parmesan cheese (if using). Mix until everything is creamy and well integrated.
