Orange Glazed Tofu Stir-Fry

1 block (14 oz) firm tofu, drained and pressed

2 tablespoons cornstarch

2 tablespoons vegetable oil, divided

1 red bell pepper, sliced into strips

1 yellow bell pepper, sliced into strips

1 cup snap peas, trimmed and cleaned

2 green onions, chopped (both white and green parts)

3 cloves garlic, minced

1 tablespoon fresh ginger, finely grated

1/4 cup low sodium soy sauce

1/4 cup freshly squeezed orange juice

2 tablespoons brown sugar

1 tablespoon rice vinegar

1 teaspoon sesame oil

Zest of 1 orange

Sesame seeds, for garnish

Cooked rice or quinoa, for serving

Instructions
 

Begin by cutting the pressed tofu into 1-inch cubes. In a mixing bowl, toss the cubes with cornstarch until they are fully coated. This step will enhance the crispiness of the tofu during cooking.

    Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. When the oil is shimmering, carefully add the tofu cubes. Cook for 4-5 minutes, turning occasionally, until the tofu is golden brown and crispy on all sides. Once done, transfer the tofu to a plate and set it aside.

      Without cleaning the skillet, add the remaining tablespoon of vegetable oil. Add the sliced red and yellow bell peppers along with the snap peas. Stir-fry these vegetables for about 3-4 minutes until they become tender yet retain a slight crunch.

        Incorporate the minced garlic and grated ginger into the pan, continuing to stir-fry for another 1 minute until the mixture is fragrant and the garlic is lightly golden.

          In a small bowl, whisk together the soy sauce, fresh orange juice, brown sugar, rice vinegar, sesame oil, and orange zest. Pour this sauce mixture into the skillet, bringing it to a gentle simmer.

            Carefully reintroduce the crispy tofu into the skillet, ensuring that it is well-coated with the vibrant orange glaze. Allow the stir-fry to cook for an additional 2-3 minutes, allowing the sauce to thicken slightly and heat everything through.

              Finally, add the chopped green onions to the skillet and toss gently to combine all the ingredients. Remove from heat and sprinkle with sesame seeds for a finishing touch.
