Ingredients

2 medium sweet potatoes

2 tablespoons extra virgin olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

½ teaspoon sea salt

¼ teaspoon freshly ground black pepper

¼ teaspoon cayenne pepper (optional, for a spicy kick)

Fresh parsley or cilantro, finely chopped, for garnish

Instructions

Preheat the Oven: Start by preheating your oven to 425°F (220°C). To make cleanup easier, line a large baking sheet with parchment paper.

Prepare the Sweet Potatoes: Rinse the sweet potatoes under cold water and then peel them. Using a sharp knife, cut the sweet potatoes into even rounds about ¼-inch thick. Uniform thickness is key for achieving that perfect crispness.

Season the Coins: In a spacious mixing bowl, combine the sweet potato coins with the olive oil, garlic powder, smoked paprika, sea salt, black pepper, and optional cayenne pepper. Toss well to ensure that each coin is evenly coated with the seasoning mixture.

Arrange on Baking Sheet: Evenly lay the sweet potato coins on the prepared baking sheet in a single layer. Make sure there’s a little space between each coin to promote even roasting and crisping.

Roast in the Oven: Place the baking sheet in the preheated oven, and roast the sweet potato coins for 20-25 minutes. About halfway through, flip the coins to ensure they roast evenly. You’re aiming for a golden brown color with crispy edges.

Check for Doneness: As the roasting time nears its end, keep an eye on your coins to prevent them from burning. The ideal texture should be soft and tender on the inside while achingly crispy on the outside.

Garnish and Serve: Once roasted, carefully remove the baking sheet from the oven and allow them to cool for a few minutes. Sprinkle the coins with freshly chopped parsley or cilantro to add a burst of color and flavor before serving.

Enjoy: Serve these sweet potato coins warm, either as a tasty side dish or a satisfying snack that’s sure to please.
