Ingredients

1 French baguette, cut into 1/2 inch thick slices

1 cup fresh ricotta cheese

2 ripe peaches, thinly sliced

2 tablespoons honey, plus extra for drizzling

1 tablespoon extra virgin olive oil

1 teaspoon fresh lemon juice

1/4 teaspoon sea salt

Fresh basil leaves, for garnish

Cracked black pepper, to taste

Instructions

Preheat the Oven: Begin by preheating your oven to 400°F (200°C) to prepare for toasting the baguette slices.

Toast the Baguette: Place the sliced baguette on a baking sheet in a single layer. Drizzle the pieces evenly with olive oil and sprinkle a pinch of sea salt over them. Bake in the preheated oven for approximately 8-10 minutes, or until golden brown and crispy. Keep a close watch to avoid burning!

Prepare the Ricotta Mixture: In a medium mixing bowl, combine the ricotta cheese, honey, lemon juice, and a pinch of sea salt. Use a spatula or wooden spoon to mix until the mixture is creamy and thoroughly combined.

Assemble the Bruschetta: After toasting, remove the baguette slices from the oven. Spread a generous layer of the ricotta mixture over each slice. Then, arrange the thin slices of peach beautifully on top of the ricotta.

Garnish: For added sweetness, drizzle a little more honey over the peach-topped bruschetta. Finish with a sprinkle of cracked black pepper and a few fresh basil leaves to elevate the flavor and add a pop of color.

Serve: Arrange the finished bruschetta on a lovely serving platter and serve immediately, allowing your guests to enjoy this delightful appetizer or snack while the toasts are still warm.
