Ingredients

2 cups creamy peanut butter

1 cup unsalted butter

4 cups powdered sugar

1 teaspoon vanilla extract

1/2 cup chopped peanuts (optional, for added crunch)

1/4 teaspoon salt

1 cup chocolate chips (optional, for topping)

Instructions

Prepare Your Pan: Begin by lining an 8x8-inch square baking dish with parchment paper, allowing the paper to overhang the edges to facilitate easy removal later. Lightly grease the parchment with cooking spray or a small amount of butter to prevent sticking.

Melt the Butter: Place a medium saucepan over low heat. Add the unsalted butter and melt completely, stirring frequently to avoid any burning. Once the butter is melted and smooth, remove the saucepan from the heat.

Mix in the Peanut Butter: Immediately add the creamy peanut butter to the melted butter. Stir continuously until the mixture is smooth and well combined, ensuring there are no lumps.

Incorporate Dry Ingredients: Gradually sift the powdered sugar into the peanut butter mixture, mixing continuously to ensure even incorporation and to prevent lumps. As you mix, the consistency will thicken. Stir in the vanilla extract and salt, ensuring they are fully blended into the mixture.

Add Crunch (Optional): If you choose to use the chopped peanuts for extra texture, gently fold them into the fudge mixture at this stage, distributing them evenly.

Transfer to Pan: Carefully pour the fudge mixture into the prepared baking dish. Using a spatula, spread it out evenly and smooth the top to create a level surface.

Add Chocolate Topping (Optional): For a decadent chocolate layer, melt the chocolate chips either in a microwave in 30-second intervals or using a double boiler. Drizzle the melted chocolate over the top of the fudge. Use a knife or spatula to gently swirl the chocolate into the fudge, creating a marbled appearance.

Chill: Place the baking dish in the refrigerator and chill for at least 2-3 hours, or until the fudge is completely set and firm.

Cut into Squares: Once the fudge has hardened, carefully lift it out of the pan by grasping the parchment paper overhang. Transfer to a cutting board and slice into small squares or rectangles as desired.

Serve and Enjoy: Enjoy your creamy peanut butter fudge immediately or store any leftovers in an airtight container in the fridge, where it will keep fresh for up to 2 weeks.
