1 lb flank steak, thinly sliced against the grain

2 tablespoons soy sauce

1 tablespoon oyster sauce

1 tablespoon cornstarch

2 tablespoons vegetable oil, divided

1 red bell pepper, sliced into thin strips

1 green bell pepper, sliced into thin strips

1 medium onion, sliced into thin wedges

3 cloves garlic, minced

1-inch piece of fresh ginger, grated

1 tablespoon rice vinegar

1 tablespoon chili sauce (adjust based on desired spice level)

Salt and freshly ground black pepper to taste

Cooked jasmine rice or steamed rice, for serving

Chopped green onions and sesame seeds, for garnish

Marinate the Steak: In a medium bowl, place the sliced flank steak. Add soy sauce, oyster sauce, and cornstarch, mixing thoroughly until the steak is evenly coated. Cover and allow it to marinate for at least 15 minutes, which will help to tenderize the meat and infuse flavor.

    Prepare the Vegetables: While the steak marinates, slice the red and green bell peppers and the onion into thin strips. Mince the garlic and grate the ginger, placing them aside for later use.

      Heat the Pan: In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Once the oil is shimmering, add the marinated steak in a single layer. Sear the steak for about 2-3 minutes without stirring, allowing it to develop a nice brown crust. If your skillet isn’t big enough, cook the steak in batches to prevent overcrowding. Remove the browned steak from the skillet and set it aside on a plate.
