1 cup pumpkin puree (can be canned or homemade)

1/3 cup honey or maple syrup (your preference)

1/4 cup coconut oil, melted (vegetable oil can be a substitute)

2 large eggs, at room temperature

1 teaspoon pure vanilla extract

1 1/2 cups all-purpose flour (substitute with whole wheat flour if desired)

1 teaspoon baking soda

1 teaspoon baking powder

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon salt

1/4 cup chia seeds

1/2 cup walnuts or pecans, chopped (optional, for extra crunch)

1/3 cup chocolate chips (optional, for a touch of sweetness)

Instructions
 

Preheat the Oven: Start by preheating your oven to 350°F (175°C). Prepare a 9x5 inch loaf pan by greasing it with cooking spray or lining it with parchment paper for easier cake removal post-baking.

    Mix Wet Ingredients: In a large mixing bowl, combine the mashed bananas, pumpkin puree, honey (or maple syrup), melted coconut oil, eggs, and vanilla extract. Stir until the mixture is smooth and all ingredients are evenly combined.

      Combine Dry Ingredients: In another bowl, whisk together the all-purpose flour, baking soda, baking powder, ground cinnamon, ground nutmeg, and salt until well blended.
