Pumpkin Chocolate Chip Oat Bars

1 cup rolled oats

1 cup all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1/4 teaspoon salt

1/2 cup brown sugar, firmly packed

1/4 cup granulated sugar

1/2 cup unsalted butter, melted and slightly cooled

1/2 cup canned pumpkin puree

1 large egg

1 teaspoon vanilla extract

1/2 cup semi-sweet chocolate chips

1/4 cup chopped walnuts (optional)

Instructions
 

Preheat your oven to 350°F (175°C). Lightly grease a 9x9 inch baking pan or line it with parchment paper, leaving some overhang for easy removal of the bars later.

    In a large mixing bowl, combine the rolled oats, all-purpose flour, baking powder, baking soda, ground cinnamon, ground nutmeg, and salt. Use a whisk to mix these dry ingredients thoroughly until well combined.

      In a separate bowl, blend together the melted and slightly cooled unsalted butter, packed brown sugar, granulated sugar, pumpkin puree, large egg, and vanilla extract. Whisk the mixture until you achieve a smooth and creamy consistency.

        Pour the wet mixture into the bowl of dry ingredients. Stir gently with a spatula or wooden spoon until everything is just combined. Be careful not to overmix; a few lumps are perfectly fine.

          If desired, fold in the chocolate chips and chopped walnuts into the batter, ensuring not to overwork the mixture.

            Spread the batter evenly into the prepared baking pan. Use a spatula to smooth the top, ensuring an even layer.

              Place the pan in the preheated oven and bake for 25-30 minutes. The bars are done when the edges turn golden brown and a toothpick inserted into the center comes out clean.

                Remove the baking pan from the oven and let the bars cool in the pan for about 10 minutes. Using the edges of the parchment paper, lift the bars out of the pan and allow them to cool completely on a wire rack.
