2 cups rolled oats

1 cup pumpkin puree (unsweetened)

1/2 cup almond butter (or your favorite nut/seed butter)

1/4 cup honey or maple syrup

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon ground ginger

1/2 cup chopped nuts (such as walnuts, pecans, or almonds)

1/2 cup mini chocolate chips or raisins (optional)

A pinch of salt

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Line a baking sheet with parchment paper to prevent sticking.

    Mix Wet Ingredients: In a large mixing bowl, combine the pumpkin puree, almond butter, honey (or maple syrup), and vanilla extract. Use a whisk or spatula to stir the mixture well until it is smooth and all ingredients are thoroughly blended.

      Combine Dry Ingredients: In a separate bowl, mix together the rolled oats, ground cinnamon, nutmeg, ginger, and a pinch of salt. Ensure that the spices are evenly distributed throughout the oats for a consistent flavor.

        Combine Mixtures: Gradually incorporate the dry oat mixture into the wet ingredients. Stir thoroughly until everything is combined into a slightly sticky mixture.

          Add Nuts & Chocolate: Fold in your choice of chopped nuts and mini chocolate chips (if using), making sure they are evenly mixed throughout the sticky base.

            Form Bites: With slightly damp hands, take small portions of the mixture and roll them into bite-sized balls, approximately 1 inch in diameter. Place the formed balls on the prepared baking sheet, arranging them about 1 inch apart to allow for even baking.
