1 cup pure pumpkin puree (canned or freshly made)

2 cups spelt flour

1 cup chopped walnuts (toasted for enhanced flavor)

1/4 cup honey or maple syrup

1/4 cup olive oil or melted coconut oil

1 teaspoon baking powder

1 teaspoon baking soda

1 teaspoon sea salt

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon ground ginger

1/2 cup milk (dairy or your choice of plant-based)

2 large eggs

Preheat your oven: Set your oven to 350°F (175°C). Grease a 9x5 inch loaf pan generously with oil or line it with parchment paper for easy removal later.

    Mix dry ingredients: In a large mixing bowl, combine the spelt flour, baking powder, baking soda, sea salt, ground cinnamon, nutmeg, and ginger. Whisk these dry ingredients together until they are evenly mixed. Set this bowl aside.

      Prepare wet ingredients: In a separate bowl, add the pumpkin puree, honey (or maple syrup), olive oil (or melted coconut oil), and eggs. Use a whisk to blend these ingredients together until the mixture is smooth and homogenous.

        Combine mixtures: Carefully pour the wet mixture into the dry ingredients. Add the milk and gently stir with a spatula or wooden spoon until just combined. Avoid overmixing; it's perfectly fine if the batter remains slightly lumpy.
