For the Dough:

2 cups masa harina (corn flour)

1 ½ cups warm water

1 teaspoon salt

1 tablespoon vegetable oil (optional for added richness)

For the Filling:

1 cup shredded cheese (queso fresco or mozzarella)

½ cup refried beans (black or pinto)

¼ cup cooked and seasoned ground meat (optional - pork or chicken)

½ cup finely chopped cooked spinach (optional)

1 teaspoon ground cumin

Salt and pepper to taste

For the Curtido (Cabbage Slaw):

2 cups finely shredded cabbage

½ cup grated carrots

¼ cup finely chopped onion

¼ cup apple cider vinegar

1 teaspoon dried oregano

Salt to taste

Instructions
 

Make the Dough:

    - In a large mixing bowl, combine the masa harina and salt. Gradually pour in the warm water while mixing with your hands until a smooth and pliable dough forms. If desired, mix in the vegetable oil for added richness.

      - Cover the bowl with a damp cloth and let the dough rest for approximately 15 minutes to prevent it from drying out.

        Prepare the Filling:

          - In a medium-sized bowl, combine the shredded cheese, refried beans, ground meat (if using), chopped spinach, cumin, and a pinch of salt and pepper. Mix well until all ingredients are evenly distributed.

            Make the Curtido:

              - In another bowl, mix together the shredded cabbage, grated carrots, chopped onion, apple cider vinegar, oregano, and salt. Stir well to combine and let this mixture sit for at least 30 minutes to allow the flavors to meld.

                Form the Pupusas:

                  - Divide the rested dough into equal portions, roughly the size of a golf ball. Using your palms, flatten each ball into a disc shape.

                    - Spoon a generous amount of filling into the center of each disc. Carefully fold the edges of the dough over the filling, pinching to seal it completely. Gently flatten the stuffed dough ball to form a thicker tortilla, being cautious to keep the filling securely inside.

                      Cook the Pupusas:

                        - Preheat a non-stick skillet or griddle over medium heat. Lightly grease the surface with oil if desired.

                          - Cook each pupusa for about 3-4 minutes on each side or until golden brown and slightly crispy. Ensure that the filling is hot and melted within.

                            Serve:

                              - Serve the pupusas hot alongside the curtido and a bowl of salsa or hot sauce to enhance the flavor.
