Ingredients

1 lb (450g) flank steak, thinly sliced against the grain

3 cups fresh broccoli florets

1 bell pepper (red or yellow), sliced into thin strips

3 cloves of garlic, finely minced

1 inch piece of ginger, grated finely

4 tablespoons soy sauce (preferably reduced sodium)

2 tablespoons oyster sauce

1 tablespoon cornstarch

2 tablespoons vegetable oil (or use sesame oil for added flavor)

1 tablespoon rice vinegar

1 tablespoon honey or brown sugar (adjust based on sweetness preference)

2 green onions, chopped for garnish

Sesame seeds, for garnish

Instructions

Prepare the Sauce: In a small mixing bowl, whisk together the soy sauce, oyster sauce, rice vinegar, honey (or brown sugar), and cornstarch until the mixture is smooth and free of lumps. Set aside to allow the flavors to meld.

Marinate the Beef: In a medium bowl, combine the sliced flank steak with half of the sauce you prepared. Allow the beef to marinate for approximately 15 minutes, ensuring the flavors infuse while you prepare the vegetables.

Blanch the Broccoli: Bring a pot of water to a rolling boil. Add the broccoli florets and blanch for about 2 minutes, or until they turn bright green and are slightly tender. Quickly transfer the florets to an ice bath to halt the cooking process, then drain and set aside.

Stir-Fry the Beef: In a large skillet or wok, heat 1 tablespoon of oil over medium-high heat until shimmering. Carefully add the marinated beef in a single layer. Cook for 2-3 minutes, stirring occasionally until browned. Once cooked, remove the beef from the skillet and keep it warm by covering it lightly with foil.

Cook the Vegetables: In the same skillet, add the remaining tablespoon of oil. Incorporate the minced garlic, grated ginger, and sliced bell pepper. Stir-fry for about 2 minutes, or until the garlic is fragrant and the bell pepper is beginning to soften.

Combine Ingredients: Return the cooked beef to the skillet, along with the previously blanched broccoli. Pour the remaining sauce over the mixture, stirring continuously to ensure every ingredient is evenly coated. Cook for an additional 2-3 minutes, allowing the sauce to thicken slightly and reheat the ingredients thoroughly.

Serve: After the final cooking phase, transfer the stir-fry to a serving dish. Garnish generously with chopped green onions and a sprinkle of sesame seeds for added texture and flavor.
