Ingredients

1 lb ground chicken

2 tablespoons vegetable oil

3 cloves garlic, minced

1 tablespoon fresh ginger, minced

1 bell pepper (any color), finely diced

1 cup water chestnuts, chopped

1/4 cup green onions, finely chopped

1/4 cup soy sauce (or tamari for a gluten-free option)

2 tablespoons hoisin sauce

1 tablespoon rice vinegar

1 teaspoon sesame oil

Salt and black pepper, to taste

1 head of butter or iceberg lettuce, leaves carefully separated

Optional toppings: chopped peanuts, fresh cilantro, or sriracha sauce

Instructions

Heat the oil: In a large skillet, pour in the vegetable oil and heat over medium-high heat until shimmering.

Cook the chicken: Add the ground chicken to the skillet. Using a spatula, break the meat apart and cook until it is evenly browned and fully cooked through, about 5-7 minutes.

Add aromatics: Once the chicken is browned, add the minced garlic and ginger to the skillet. Stir constantly for about 1 minute, or until the mixture is fragrant.

Incorporate vegetables: Toss in the diced bell pepper, chopped water chestnuts, and green onions. Cook for an additional 3-4 minutes, stirring occasionally, until the vegetables are slightly tender yet still crisp.

Sauce it up: Pour in the soy sauce, hoisin sauce, rice vinegar, and sesame oil. Mix everything together thoroughly, then let it cook for another 2-3 minutes so the flavors can harmonize. Taste the filling and adjust the seasoning with salt and black pepper as desired.

Prepare the lettuce leaves: While the chicken mixture is cooking, carefully separate the lettuce leaves. Give them a rinse under cold water to crisp them up, then gently pat dry.

Assemble wraps: Take a generous spoonful of the chicken mixture and place it in the center of each lettuce leaf, creating a little bed for the filling.

Garnish and serve: Enhance your wraps with your choice of toppings, such as chopped peanuts for crunch, fresh cilantro for brightness, or a drizzle of sriracha for an extra kick. To eat, fold the lettuce around the filling like a taco and enjoy!
