Ingredients

1 lb ground beef

1 can (15 oz) kidney beans, rinsed and drained

1 can (15 oz) black beans, rinsed and drained

1 medium onion, finely diced

2 cloves garlic, minced

1 can (14.5 oz) diced tomatoes (with juices)

1 can (6 oz) tomato paste

2 cups beef broth

2 tbsp chili powder

1 tsp ground cumin

1/2 tsp smoked paprika

1/2 tsp salt

1/4 tsp cayenne pepper (optional for extra heat)

2 tbsp olive oil

Fresh cilantro or chopped green onions for garnish (optional)

Instructions

Sauté Aromatics: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the finely diced onion, stirring occasionally for about 3-4 minutes until it turns translucent. Next, add the minced garlic and sauté for an additional minute until fragrant, ensuring not to let it burn.

Brown the Beef: Incorporate the ground beef into the pot, using a wooden spoon to break it into smaller pieces. Cook for 5-7 minutes, stirring occasionally, until the beef is browned and fully cooked, with no pink remaining.

Combine Ingredients: To the beef mixture, add the diced tomatoes (with their juices), tomato paste, beef broth, rinsed kidney beans, rinsed black beans, chili powder, cumin, smoked paprika, salt, and cayenne pepper (if you want a kick). Mix everything thoroughly to ensure an even distribution of spices and ingredients.

Simmer: Increase the heat to bring the chili to a gentle boil. Once boiling, reduce the heat to a simmer. Partially cover the pot and let it cook for about 15-20 minutes, stirring occasionally. This simmering process helps all the flavors meld together beautifully.

Serve: Once the chili reaches your desired thickness, taste it and adjust the seasoning if needed. Serve hot, garnished with fresh cilantro or diced green onions for a vibrant finish.
