To achieve the perfect stir-fry, starting with a properly heated pan is essential. High heat is crucial for this cooking method as it ensures that the ingredients sear quickly, locking in flavor and moisture. Begin by placing a large wok or heavy-bottomed skillet on the stove over medium-high heat. Allow the pan to heat up for about 2-3 minutes until it becomes hot enough that a drop of water sizzles and evaporates almost instantly. This high temperature will help create that coveted sizzling sound when you add your beef, contributing to the overall flavor profile of the dish.

Ingredients

1 lb (450g) beef flank steak, thinly sliced against the grain

2 cups broccoli florets, fresh or frozen

1 bell pepper (red or yellow), thinly sliced

3 cloves garlic, minced

1-inch piece ginger, finely grated

3 tablespoons soy sauce (divided)

1 tablespoon oyster sauce

1 tablespoon cornstarch

2 tablespoons vegetable oil (divided)

1 tablespoon sesame oil

2 green onions, thinly sliced (for garnish)

Cooked rice or noodles, for serving

Instructions

Marinate the Beef: In a medium bowl, mix the thinly sliced beef flank steak with 2 tablespoons of soy sauce and the cornstarch. Ensure all the beef slices are well-coated. Let the mixture marinate for about 10 minutes to enhance flavor and tenderness, while you prep the other ingredients.

Heat the Pan: Place a large skillet or wok over high heat. Once hot, add 1 tablespoon of vegetable oil. Heat the oil until it shines and is almost smoking.

Cook the Beef: Carefully add the marinated beef in a single layer to the hot pan. Allow the beef to sear undisturbed for 2-3 minutes to achieve a nice browning. Afterward, stir-fry for an additional 2-3 minutes, or until the beef is fully cooked through. Remove the beef from the pan and set it aside on a plate.

Stir-Fry the Vegetables: In the same frying pan, add the remaining tablespoon of vegetable oil. Add in the minced garlic and grated ginger, stirring quickly to avoid burning, then toss in the sliced bell pepper and broccoli florets. Stir-fry the mixture for about 3-4 minutes, or until the broccoli is a vibrant green and tender-crisp in texture.

Combine Everything: Return the cooked beef back into the pan with the vegetables. Pour in the last tablespoon of soy sauce and the oyster sauce. Stir everything together over high heat for another 2 minutes, ensuring all ingredients are well-coated and heated through.

Finishing Touches: Drizzle the sesame oil over the stir-fry and toss again to combine all the flavors. Remove the pan from the heat.

Serve: To serve, dish out the sizzling beef and broccoli stir-fry on a bed of fluffy cooked rice or tender noodles. Finish with a sprinkle of sliced green onions on top for a fresh garnish and enjoy immediately.
