4 large russet potatoes

1 cup fresh broccoli florets, chopped

1 cup sharp cheddar cheese, shredded (divided)

1/2 cup sour cream

2 tablespoons unsalted butter, softened

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and freshly ground black pepper, to taste

Optional: Chopped green onions or fresh chives, for garnish

Preheat the Oven: Start by preheating your oven to 425°F (220°C) to get it ready for the potatoes.

    Prepare the Potatoes: Thoroughly wash each russet potato under running water to remove any dirt. Prick each potato with a fork several times (about 6-8 pricks) to allow steam to escape while baking, preventing them from bursting.

      Bake the Potatoes: Arrange the pricked potatoes directly on the oven rack or on a lined baking sheet. Bake for 45-60 minutes, or until they are fork-tender. You can check their doneness by inserting a fork into the thickest part of the potato.

        Cook the Broccoli: While the potatoes are baking, bring a small pot of salted water to a rolling boil. Add the chopped broccoli florets and blanch them for about 2-3 minutes, until bright green and tender-crisp. Immediately drain the broccoli and place it in ice water to stop the cooking process. Once cooled, drain again and set aside.

          Prepare the Filling: In a mixing bowl, combine the sour cream, softened butter, garlic powder, onion powder, and half of the shredded cheddar cheese. Mix until you achieve a smooth consistency. Gently fold in the blanched broccoli florets. Season the mixture with salt and pepper to taste.

            Stuff the Potatoes: After the potatoes have finished baking, carefully remove them from the oven and allow them to cool for a few minutes. Using a sharp knife, cut each potato lengthwise down the center, being careful not to cut all the way through. Use a fork to fluff the insides of each potato slightly.
