Quick Chicken Tacos with Avocado Lime Sauce

For the Chicken Tacos:

1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces

2 tablespoons olive oil

1 teaspoon chili powder

1 teaspoon ground cumin

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and freshly ground black pepper, to taste

8 small corn or flour tortillas

1 cup shredded lettuce

1 cup diced tomatoes

1/2 cup shredded cheese (choose cheddar or a Mexican blend)

Fresh cilantro leaves, for garnish (optional)

For the Avocado Lime Sauce:

1 ripe avocado, pitted and peeled

1/4 cup Greek yogurt or sour cream

Juice of 1 lime (about 2 tablespoons)

1 clove garlic, minced

Salt, to taste

Water, as needed to achieve desired consistency

Prepare the Avocado Lime Sauce:

    - In a blender or food processor, combine the peeled avocado, Greek yogurt (or sour cream), lime juice, minced garlic, and a pinch of salt.

      - Blend until creamy and smooth, adjusting the thickness by adding water one tablespoon at a time until you reach your desired consistency. Taste the sauce and add more salt if needed. Set aside.

        Cook the Chicken:

          - Heat olive oil in a large skillet over medium-high heat.

            - Once the oil is hot, add the chicken pieces to the skillet. Sprinkle the chili powder, cumin, garlic powder, onion powder, and a good amount of salt and pepper over the chicken.

              - Sauté for about 6-8 minutes, stirring occasionally, until the chicken is golden brown and cooked through (ensure the internal temperature reaches 165°F or 75°C).

                Warm the Tortillas:

                  - While the chicken is cooking, warm the tortillas. You can do this by placing them in a dry skillet over medium heat for about 30 seconds on each side or wrapping them in a damp paper towel and microwaving for about 20 seconds until soft and pliable.

                    Assemble the Tacos:

                      - To assemble each taco, lay a warm tortilla on a plate. Add a generous scoop of the cooked chicken, followed by a handful of shredded lettuce, diced tomatoes, and a sprinkle of cheese.
