2 boneless, skinless chicken breasts

2 tablespoons olive oil

1 teaspoon chili powder

1 teaspoon smoked paprika

1 teaspoon garlic powder

1/2 teaspoon ground cumin

Juice and zest of 1 lime

Salt and freshly ground black pepper, to taste

4 flatbreads (store-bought or homemade)

1 cup shredded mozzarella cheese

1/2 cup fresh cilantro, chopped

1 ripe avocado, sliced

1/2 cup cherry tomatoes, halved

Lime wedges, for serving

Marinate the Chicken: In a medium bowl, whisk together the olive oil, chili powder, smoked paprika, garlic powder, ground cumin, lime juice, and lime zest. Season the marinade with a pinch of salt and freshly ground black pepper. Add the chicken breasts to the bowl, turning them to coat thoroughly in the marinade. Cover the bowl with plastic wrap and let the chicken marinate for a minimum of 15 minutes. For deeper flavor, let it marinate for up to 2 hours in the refrigerator.

    Cook the Chicken: Heat a skillet or a grill pan over medium-high heat until hot. Once ready, add the marinated chicken breasts, cooking for approximately 6-7 minutes on each side, or until cooked through and the juices run clear (the internal temperature should reach 165°F / 74°C).
