8 oz fettuccine pasta

1 lb large shrimp, peeled and deveined

2 cups fresh spinach, washed and removed from stems

2 tablespoons olive oil

3 cloves garlic, minced

1 cup heavy cream

1 cup grated Parmesan cheese

Salt and freshly ground black pepper, to taste

1/4 teaspoon red pepper flakes (optional for added heat)

Fresh basil leaves for garnish (optional)

Cook the Pasta: In a large pot, bring water to a vigorous boil. Generously season with salt. Add the fettuccine and cook according to the package instructions until al dente, usually around 8-10 minutes. Before draining, reserve 1/2 cup of the starchy pasta water, then drain the rest and set the pasta aside.

    Sauté the Shrimp: In a large skillet, heat the olive oil over medium heat. Once shimmering, add the minced garlic and sauté for about 30 seconds until it is fragrant but not browned. Carefully add the shrimp to the skillet, seasoning them with salt, black pepper, and red pepper flakes if you like a bit of heat. Cook the shrimp for 2-3 minutes per side, or until they are pink and opaque. Once done, transfer the shrimp to a plate, leaving any remaining oil and garlic in the skillet.

      Prepare the Alfredo Sauce: Lower the heat to a gentle simmer in the same skillet and pour in the heavy cream. Gradually stir in the grated Parmesan cheese until it melts into a creamy sauce.
