Ingredients

12 oz (340g) spaghetti or your favorite pasta

1 ½ cups cherry tomatoes, halved

3 cloves garlic, minced

¼ cup fresh basil leaves, finely chopped

1 teaspoon balsamic vinegar

¼ cup extra virgin olive oil, plus more for drizzling

Salt and black pepper, to taste

½ cup grated Parmesan cheese (optional, for serving)

1 teaspoon red pepper flakes (optional, for heat)

Instructions

Cook the Pasta: In a large pot, bring salted water to a rapid boil. Add the spaghetti and cook according to package instructions until it reaches an al dente texture (usually 8-10 minutes). Before draining, reserve ½ cup of the starchy pasta water. Drain the pasta and set it aside.

Prepare the Bruschetta Topping: While the pasta is cooking, take a mixing bowl and combine the halved cherry tomatoes, minced garlic, finely chopped fresh basil, balsamic vinegar, and ¼ cup of olive oil. Season the mixture with salt, black pepper, and red pepper flakes (if using). Gently toss the ingredients together until the tomatoes are fully coated and start to release their juices.

Combine Pasta and Topping: In the same pot used for cooking the spaghetti (to save dishes), return the drained pasta. Pour the prepared bruschetta topping over the hot spaghetti. Add the reserved pasta water a little at a time, stirring to create a light, flavorful sauce that coats the pasta evenly. Toss everything together until well combined.

Serve: Use tongs to plate the pasta, creating a slight nest or twirl of spaghetti. Drizzle with extra olive oil for richness, and sprinkle with grated Parmesan cheese if desired. Serve immediately while hot, and enjoy the fresh flavors!
