2 tablespoons vegetable oil

1 cup broccoli florets

1 red bell pepper, thinly sliced

1 yellow bell pepper, thinly sliced

1 cup snap peas, ends trimmed

1 medium carrot, julienned

2 green onions, chopped

3 cloves garlic, minced

1 tablespoon fresh ginger, minced

For the Peanut Sauce:

3 tablespoons creamy peanut butter

2 tablespoons soy sauce

1 tablespoon honey or maple syrup

1 teaspoon sesame oil

1 tablespoon rice vinegar

1 tablespoon water (plus more for desired consistency)

Prepare the Peanut Sauce: In a small mixing bowl, combine the creamy peanut butter, soy sauce, honey (or maple syrup), sesame oil, rice vinegar, and 1 tablespoon of water. Whisk together until smooth and creamy. If the sauce is too thick for your liking, gradually add more water, a teaspoon at a time, until you reach your desired consistency. Set the sauce aside.

    Heat the Oil: In a large skillet or wok, add the vegetable oil and heat over medium-high heat until shimmering.
