1/4 cup strong espresso coffee (cooled to room temperature)

4 large eggs

2 teaspoons pure vanilla extract

Preheat the Oven: Start by preheating your oven to 325°F (160°C). This ensures that the custard cooks evenly.

    Combine Dairy: In a medium saucepan, pour in the whole milk, heavy cream, and granulated sugar. Heat over medium flame, stirring occasionally until the mixture is warm and the sugar has fully dissolved. Keep a close eye to avoid bringing it to a boil.

      Add Espresso: Once the mixture is warm, take the saucepan off the heat. Gradually whisk in the cooled espresso, vanilla extract, and a pinch of salt until all ingredients are thoroughly integrated.

        Whisk the Eggs: In a large mixing bowl, lightly whisk the eggs until they become slightly frothy. Carefully pour in the warm milk mixture in a slow, steady stream while continuously whisking. This will prevent the eggs from curdling in the heat.

          Strain the Mixture: To achieve a velvety texture, strain the custard mixture through a fine-mesh sieve into another bowl or jug. This step removes any small bits of cooked egg, ensuring a smooth custard.

            Prepare for Baking: Arrange 6 small ramekins in a roasting pan or a large baking dish. Gently pour the strained custard mixture into each ramekin, filling them about three-quarters full to allow for expansion.
