1 cup whole milk

4 large egg yolks

1/2 cup granulated sugar

2 tablespoons instant espresso powder

1 teaspoon pure vanilla extract

Prepare the Milk Mixture: In a medium saucepan, combine the heavy cream, whole milk, instant espresso powder, and a pinch of salt. Heat the mixture over medium heat, stirring occasionally to help dissolve the espresso powder, until it's hot but not boiling.

    Whisk the Egg Yolks: In a separate mixing bowl, vigorously whisk together the egg yolks and granulated sugar. Continue whisking until the mixture becomes pale and slightly thickened, which should take about 2-3 minutes.

      Temper the Egg Yolks: Once the milk mixture is heated, carefully ladle about 1 cup of this hot mixture into the bowl with the whisked egg yolks. Stir constantly while adding the hot liquid to temper the eggs. This process helps prevent the yolks from scrambling.

        Combine and Cook: Pour the tempered egg yolk mixture back into the saucepan with the remaining milk mixture. Cook over low heat, stirring constantly with a wooden spoon or silicone spatula, until the custard thickens enough to coat the back of the spoon. This should take about 5-10 minutes, but be careful not to let it boil.
