Roasted Cauliflower Tacos

1 medium head of cauliflower, cut into bite-sized florets

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon ground cumin

½ teaspoon chili powder

½ teaspoon garlic powder

Salt and freshly ground black pepper, to taste

8 small corn or flour tortillas

1 ripe avocado, sliced

1 cup cherry tomatoes, halved

½ cup red cabbage, finely shredded

¼ cup fresh cilantro, roughly chopped

Lime wedges, for serving

Optional: Your favorite hot sauce for additional heat

Preheat the Oven: Begin by preheating your oven to 425°F (220°C). For an easier cleanup, line a large baking sheet with parchment paper.

    Prepare the Cauliflower: In a large mixing bowl, add the cauliflower florets. Drizzle in the olive oil and sprinkle with smoked paprika, cumin, chili powder, garlic powder, and a pinch of salt and pepper. Use your hands or a spatula to toss the florets thoroughly, ensuring they are evenly coated with the spice mixture.

      Roast the Cauliflower: Spread the coated cauliflower florets in a single layer on the prepared baking sheet. Place the baking sheet in the preheated oven and roast for 25-30 minutes, stirring halfway through the cooking time. The cauliflower should be tender and have a delightful golden brown color when done.

        Warm the Tortillas: While the cauliflower is roasting, take the opportunity to warm your tortillas. You can heat them in a dry skillet over medium heat for about 30 seconds on each side until soft and pliable, or wrap them in aluminum foil and warm them in the oven for the last 5 minutes of the cauliflower’s roasting time.

          Assemble the Tacos: As soon as the roasted cauliflower is out of the oven, carefully transfer it to a serving platter. To assemble each taco, take a warm tortilla and place a generous portion of roasted cauliflower in the center. Top it off with a few slices of avocado, halved cherry tomatoes, and finely shredded red cabbage.
