Ingredients

200g assorted cured meats (such as prosciutto, salami, and chorizo)

150g assorted cheeses (including aged cheddar, brie, and blue cheese)

1 cup seasonal vegetables (such as bell peppers, zucchini, and mushrooms)

1 cup assorted olives (a mix of green and black)

1 cup mixed nuts (such as almonds, walnuts, and pecans)

2 tablespoons olive oil

1 tablespoon balsamic vinegar

2 teaspoons fresh rosemary, finely chopped

2 teaspoons fresh thyme, finely chopped

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and freshly cracked black pepper, to taste

Optional: fresh baguette or an assortment of crackers for serving

Instructions

Preheat the Oven: Begin by preheating your oven to 400°F (200°C) to ensure it’s hot enough for roasting.

Prepare the Vegetables: Rinse and thoroughly chop the seasonal vegetables into bite-sized pieces. Transfer them into a large mixing bowl.

Season the Vegetables: In the bowl, drizzle the olive oil and balsamic vinegar over the chopped vegetables. Add the finely chopped rosemary, thyme, garlic powder, onion powder, and season with salt and freshly cracked black pepper. Toss everything gently until the vegetables are evenly coated with the seasoning.

Arrange the Ingredients: On a large baking sheet or roasting pan, evenly spread the seasoned vegetables in a single layer to promote even roasting.

Add Meats and Cheeses: Artfully arrange the assorted cured meats and cheeses alongside the vegetables on the baking sheet. Leave some space in between the items to allow for easy serving and to create an appealing presentation.

Roast: Place the baking sheet in the preheated oven. Roast the ingredients for 20-25 minutes or until the vegetables are tender, lightly caramelized, and the cheeses are just beginning to melt.

Prepare Nuts and Olives: While the charcuterie board is roasting, prepare small serving bowls filled with the assorted olives and mixed nuts, ready for guests to enjoy as snacks.

Assemble the Board: Once roasting is complete, carefully take the baking sheet out of the oven. Let it cool slightly, then elegantly arrange all components – the roasted vegetables, cured meats, and cheeses – on a wooden board or an attractive serving platter.

Serve: Offer the charcuterie board with freshly sliced baguette or an appealing variety of crackers on the side. For an elegant touch, garnish with additional fresh herbs.
