Roasted Garlic and Broccoli Pita Pizza

2 whole wheat pitas

1 cup broccoli florets (fresh or frozen)

4 cloves of garlic, peeled

1 tablespoon olive oil, divided

1 teaspoon salt, divided

1/2 teaspoon black pepper

1/2 teaspoon red pepper flakes (optional)

1 cup shredded mozzarella cheese

1/2 cup crumbled feta cheese

1/4 cup sun-dried tomatoes, chopped

1 tablespoon fresh lemon juice

Fresh basil leaves for garnish (optional)

Instructions
 

Preheat the Oven: Begin by setting your oven to 400°F (200°C) to ensure it's hot and ready for baking your pizzas.

    Prepare the Garlic: Cut a piece of aluminum foil, large enough to wrap the garlic cloves. Lay the peeled garlic in the center, drizzle with 1 teaspoon of olive oil, and sprinkle with a pinch of salt. Fold the foil tightly to create a sealed packet.

      Roast the Garlic: Place the garlic packet directly on the oven rack and roast for approximately 20 minutes, or until the garlic cloves are soft and turn a golden color. Once done, carefully remove from the oven and let it cool slightly.

        Prepare the Broccoli: While the garlic is roasting, bring a medium pot of salted water to a boil. Add the broccoli florets and blanch for about 3 minutes until they become a vibrant green and slightly tender. Quickly drain and plunge the broccoli into a bowl filled with ice water to stop the cooking process. After a couple of minutes, drain the broccoli again and set aside.
