Roasted Garlic Sweet Potato Mash

2 large sweet potatoes (approximately 1.5 lbs), peeled and diced into 1-inch cubes

1 whole head of garlic

2 tablespoons olive oil, divided

2 tablespoons unsalted butter, at room temperature

½ cup milk (or a dairy-free alternative, such as almond or oat milk)

Sea salt, to taste

Freshly cracked black pepper, to taste

Chopped fresh chives or parsley, for garnish (optional)

Instructions
 

Preheat the Oven: Set your oven temperature to 400°F (200°C) to allow it to fully preheat while you prepare the other ingredients.

    Prepare the Garlic: Take the whole head of garlic and slice off the top, exposing the individual cloves. Drizzle 1 tablespoon of olive oil over the exposed cloves, then wrap the garlic tightly in aluminum foil. Place it in the preheated oven and roast for about 30-35 minutes, or until the garlic is golden brown and soft to the touch.

      Boil the Sweet Potatoes: In the meantime, fill a large pot with salted water and add the cubed sweet potatoes. Bring the pot to a vigorous boil over high heat. Cook the sweet potatoes for approximately 15-20 minutes, or until they are fork-tender. Once cooked, drain the sweet potatoes in a colander and set them aside to cool slightly.

        Mash the Sweet Potatoes: In a large mixing bowl, add the drained sweet potatoes. Squeeze the roasted garlic cloves out of their skins and into the bowl with the sweet potatoes. Incorporate the butter, the remaining tablespoon of olive oil, and the milk into the mixture.

          Mix and Season: Using a potato masher or a fork, mash the sweet potatoes and garlic together until you achieve a smooth and creamy consistency. Adjust the amount of milk based on your desired level of creaminess. Season generously with sea salt and freshly cracked black pepper, ensuring everything is well blended.
