1 lb (450g) rigatoni pasta

1 lb (450g) Italian sausage (sweet or spicy, casings removed)

1 medium onion, finely chopped

3 cloves garlic, minced

1 can (28 oz) crushed tomatoes

1 tsp dried oregano

1 tsp dried basil

½ tsp red pepper flakes (adjust to taste)

Salt and pepper, to taste

1 cup (240ml) heavy cream

1 ½ cups (150g) shredded mozzarella cheese

½ cup (50g) grated Parmesan cheese

2 tbsp olive oil

Fresh basil leaves, for garnish

Preheat the Oven: Begin by preheating your oven to 375°F (190°C) so it's ready for baking.

    Cook the Pasta: Fill a large pot with water, salt it generously, and bring it to a rolling boil. Add the rigatoni and cook according to the package instructions until al dente. Once done, drain the pasta and set it aside.

      Brown the Sausage: In a large skillet over medium heat, add the olive oil. Once hot, add the Italian sausage, breaking it apart with a spatula as it cooks. Sauté for approximately 5-7 minutes or until the sausage is nicely browned.

        Sauté Vegetables: Introduce the finely chopped onion to the skillet, sautéing for about 3-4 minutes until it's soft and translucent. Add the minced garlic, cooking for another 1-2 minutes until it becomes fragrant.

          Combine Tomato Mixture: Pour in the crushed tomatoes along with the dried oregano, basil, red pepper flakes, and a sprinkle of salt and pepper. Allow the mixture to simmer for about 10 minutes, stirring occasionally, to let all the flavors meld together.
