Ingredients

1 pound fresh salmon fillet, skin removed

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon salt

1/2 teaspoon freshly ground black pepper

1 cup fresh blueberries

1/4 cup honey

2 tablespoons apple cider vinegar

1 tablespoon soy sauce (or tamari for gluten-free)

1 tablespoon freshly squeezed lemon juice

1 teaspoon freshly grated ginger

8 large romaine or butter lettuce leaves

1/4 cup finely chopped red onion

1/4 cup fresh cilantro, chopped

Lime wedges, for serving

Instructions

Prepare the Salmon: Begin by preheating your oven to 350°F (175°C). Line a baking sheet with parchment paper to prevent sticking. Place the salmon fillet on the prepared baking sheet. Drizzle the salmon with olive oil, then sprinkle with garlic powder, salt, and black pepper. Bake in the preheated oven for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork.

Make the Blueberry Glaze: While the salmon is baking, prepare the glaze. In a small saucepan, combine the fresh blueberries, honey, apple cider vinegar, soy sauce, freshly squeezed lemon juice, and grated ginger. Cook over medium heat, stirring occasionally to prevent sticking. Allow the mixture to cook for about 5-7 minutes, or until the blueberries have broken down and the glaze starts to thicken. Once ready, remove it from the heat and let it cool slightly.

Assemble the Wraps: After the salmon has cooled for a few minutes, flake it into large, bite-sized chunks using a fork. Take each lettuce leaf and add a generous portion of flaked salmon. Top with a spoonful of the blueberry glaze, followed by a sprinkle of chopped red onion and fresh cilantro for added flavor and freshness.

Serve: Arrange the assembled lettuce wraps on a serving platter. Just before serving, squeeze fresh lime juice over the top for a zesty finish, and drizzle any leftover blueberry glaze over the wraps for an extra burst of flavor.

Enjoy: These delightful lettuce wraps are perfect for a light lunch, a fresh appetizer, or a vibrant addition to any dinner spread!
