Ingredients

For the Crust:

1 ½ cups chocolate cookie crumbs (Oreo or Keebler work well)

½ cup unsalted butter, melted

2 tablespoons granulated sugar

For the Cheesecake Filling:

3 (8-ounce) packages cream cheese, softened at room temperature

1 cup granulated sugar

3 large eggs, at room temperature

1 teaspoon pure vanilla extract

1 cup shredded coconut, toasted (set aside a little for topping)

½ cup chocolate chips, melted

For the Topping:

1 cup caramel sauce (can be store-bought or homemade)

½ cup shredded coconut, toasted

½ cup chocolate ganache (made by combining equal parts chocolate and cream)

Instructions

Prepare the Crust:

    - Preheat your oven to 325°F (160°C).

      - In a medium mixing bowl, combine the chocolate cookie crumbs, melted butter, and granulated sugar. Mix until fully combined and the mixture has a wet sand-like texture.

        - Firmly press this mixture into the bottom of a 9-inch springform pan to create an even layer. Bake for 10 minutes, then remove from the oven and allow it to cool completely.

          Make the Cheesecake Filling:

            - In a large mixing bowl, beat the softened cream cheese and granulated sugar together using an electric mixer on medium speed until the mixture is smooth and creamy.

              - Gradually add the eggs one at a time, mixing at low speed just until combined after each addition—avoid over-mixing.

                - Stir in the vanilla extract and the melted chocolate, mixing until the components are well blended.

                  - Gently fold in the toasted shredded coconut with a spatula to maintain its fluffy texture.

                    Bake the Cheesecake:

                      - Carefully pour the cheesecake filling over the cooled crust in the springform pan. Use a spatula to smooth the top evenly.

                        - Place the cheesecake in the preheated oven and bake for 50-60 minutes, or until the center appears set but still has a slight jiggle when shaken.

                          - Turn off the oven and crack open the door, letting the cheesecake cool in the oven for an additional hour, which will help prevent cracking.

                            Add the Topping:

                              - Once the cheesecake has cooled, transfer it to the refrigerator for at least 4 hours, but ideally overnight to achieve the best flavor and texture.

                                - Before serving, drizzle the caramel sauce generously over the chilled cheesecake, then sprinkle the toasted coconut on top, followed by a drizzle of the chocolate ganache.

                                  Serve and Enjoy:

                                    - To serve, run a knife around the edge of the springform pan to loosen it, then carefully release the sides. Slice into 12 portions and present chilled for a delectable treat.
