4 cups fresh spinach, washed and roughly chopped

3 tablespoons olive oil

2 cloves garlic, minced

1 small onion, finely chopped

½ teaspoon red pepper flakes (optional, for a spicy kick)

¼ teaspoon salt (adjust to taste)

¼ teaspoon black pepper (adjust to taste)

2 tablespoons balsamic vinegar

2 tablespoons grated Parmesan cheese (optional, for a cheesy finish)

Instructions
 

Heat the Oil: Place a large skillet over medium heat and pour in the olive oil. Let it warm for about 1 minute until shimmering, ensuring it's hot enough to sauté vegetables without absorbing too much moisture.

    Sauté Onions & Garlic: Add the finely chopped onion to the hot oil. Cook, stirring frequently, for approximately 3-4 minutes until the onion turns translucent and softens. Next, incorporate the minced garlic and red pepper flakes (if using). Sauté for an additional 30 seconds until the garlic is fragrant but not browned to prevent bitterness.

      Cook the Mushrooms: Increase the heat slightly to medium-high and add the sliced mushrooms to the pan. Sauté them for about 5-7 minutes, stirring occasionally, until they become golden brown and tender, allowing their earthy flavors to develop.
