1 cup Arborio rice

4 cups low-sodium chicken broth, kept warm

1 cup white wine (optional; substitute with additional broth if preferred)

1 medium onion, finely chopped

3 cloves garlic, minced

8 oz (225g) cremini or button mushrooms, cleaned and sliced

1 cup freshly grated Parmesan cheese

4 tablespoons unsalted butter

3 tablespoons olive oil

1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)

1 tablespoon fresh parsley, chopped (for garnish)

Salt and pepper to taste

Zest of 1 lemon (optional, for brightness)

Prepare the Chicken: In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the diced chicken thighs to the skillet, seasoning them generously with salt, pepper, and half of the thyme. Sauté the chicken for about 7-10 minutes, or until it is golden brown and cooked through. Once done, remove the chicken from the skillet and set it aside on a plate.

    Sauté the Vegetables: In the same skillet, add the remaining tablespoon of olive oil and 2 tablespoons of butter. Once the butter has melted, toss in the chopped onion and minced garlic. Sauté these aromatics for about 3-4 minutes, or until they become translucent. Next, add the sliced mushrooms and the remaining thyme, stirring frequently, until the mushrooms are tender and browned, approximately 5 minutes.

      Toast the Rice: Add the Arborio rice to the skillet with the sautéed vegetables. Stir the rice for 1-2 minutes, allowing it to toast slightly and absorb the flavors from the skillet; it should take on a light golden hue and develop a nutty aroma.

        Deglaze and Simmer: If you are using white wine, pour it into the skillet now, stirring well to deglaze the pan and pick up any flavorful bits stuck to the bottom. Let the wine simmer for about 2-3 minutes until it has mostly evaporated.

          Cook the Risotto: Begin adding the warm chicken broth to the skillet one ladle at a time, stirring continuously. Allow each ladle of broth to be absorbed by the rice before adding the next. This gradual cooking process should take about 18-20 minutes, and the risotto should turn creamy and the rice should be cooked al dente.

            Combine Ingredients: Once the risotto reaches the desired creamy consistency, stir in the cooked chicken, any remaining butter, and the grated Parmesan cheese. Mix everything thoroughly until the risotto is creamy and well-combined. Taste the dish and adjust the seasoning with salt, pepper, and lemon zest for a pop of freshness if desired.
