Savory Mushroom and Spinach Quesadillas

1 tablespoon olive oil

1 cup mushrooms, sliced (such as cremini or button)

2 cups fresh spinach, chopped

1 clove garlic, minced

1 teaspoon dried oregano

Salt and pepper, to taste

1 ½ cups shredded mozzarella cheese

4 large flour tortillas

1 tablespoon butter (for grilling)

Optional toppings: sour cream, salsa, or guacamole

Instructions
 

Sauté the Vegetables:

    In a large skillet, heat the olive oil over medium heat. Once hot, add the sliced mushrooms. Sauté for approximately 5 minutes, stirring occasionally, until the mushrooms are softened and have turned golden brown. Add the minced garlic and dried oregano. Cook for an additional minute, stirring frequently, until the garlic becomes fragrant.

      Add Spinach:

        Stir in the chopped spinach and continue to cook for about 2-3 minutes, or until the spinach has wilted down. Once wilted, season the mixture with salt and pepper to taste. Remove the skillet from the heat and set the vegetable filling aside.

          Assemble Quesadillas:

            On a clean surface, lay one tortilla flat. Evenly sprinkle ¼ cup of shredded mozzarella cheese over one half of the tortilla. Top this cheese layer with a generous scoop of the mushroom and spinach mixture, then add another ¼ cup of cheese over the filling. Carefully fold the tortilla in half to encase the filling.

              Cook the Quesadilla:

                In the same skillet (or another skillet if preferred), melt ½ tablespoon of butter over medium heat. Once melted, carefully place the folded quesadilla in the skillet. Cook for about 3-4 minutes on one side, until it is golden brown and crispy. Gently flip the quesadilla, butter the second side, and cook for an additional 3-4 minutes, until the cheese is melted and the tortilla is nicely crisped.

                  Repeat:

                    Continue the process with the remaining tortillas, filling, and butter, ensuring to cook each quesadilla until perfectly golden and crispy.

                      Serve:

                        Cut each quesadilla into wedges and serve warm. Garnish with your choice of optional toppings such as sour cream, salsa, or guacamole for added flavor.
