1 lb (450g) ground beef (80/20 blend preferred for juiciness)

8 oz (225g) mushrooms, finely chopped (cremini or button varieties work well)

1 small onion, finely chopped

2 cloves garlic, minced

1 tsp Worcestershire sauce

1 tsp soy sauce

1 tsp dried thyme

Salt and freshly ground black pepper, to taste

8 slices Swiss cheese

12 slider buns or mini brioche buns

2 tbsp olive oil, divided

2 tbsp butter, divided

Fresh parsley, chopped (for garnish, optional)

Prepare the Mushroom Mixture: In a skillet over medium heat, add 1 tablespoon of olive oil along with 1 tablespoon of butter. Once the butter is melted and sizzling, introduce the finely chopped mushrooms and onion. Sauté for 5-7 minutes until they soften and release moisture. Add the minced garlic, Worcestershire sauce, soy sauce, dried thyme, and season generously with salt and pepper. Allow the mixture to cook for an additional 2 minutes to combine flavors. Remove from heat and let cool slightly.

    Make the Beef Patties: In a large mixing bowl, combine the ground beef with the cooled mushroom mixture. Gently mix with your hands or a spoon until just combined; avoid overworking the meat for tender sliders. Shape the mixture into 12 equal-sized patties.

      Cook the Patties: Reheat the same skillet used for the mushrooms, adding the remaining tablespoon of olive oil over medium-high heat. Carefully place the patties in the skillet and cook for approximately 3-4 minutes on each side, or until fully cooked to your liking (medium-rare to medium recommended). In the last minute of cooking, place a slice of Swiss cheese atop each patty. Cover the skillet with a lid to melt the cheese beautifully.

        Prepare the Buns: While the patties are cooking, melt the remaining tablespoon of butter in a small skillet over low heat. Add the slider buns to the skillet and lightly toast them until they turn a warm golden brown, enhancing their flavor and crunch.

          Assemble the Sliders: Begin assembling your sliders by placing a melted cheese-topped mushroom slider patty on each toasted bun base. Gently place the bun tops over the patties.
