1 lb ground turkey

2 medium sweet potatoes, peeled and cut into small cubes

1 medium onion, finely diced

2 cloves garlic, minced

1 red bell pepper, chopped

1 cup fresh spinach leaves, roughly chopped

1 tsp smoked paprika

½ tsp ground cumin

½ tsp dried thyme

Salt and black pepper, to taste

2 tbsp olive oil

¼ cup low-sodium chicken broth (or water)

Fresh parsley, chopped (for garnish, optional)

Prepare Ingredients: Start by thoroughly washing and peeling the sweet potatoes, then cut them into small cubes. Finely dice the onion and red bell pepper, and mince the garlic to maximize flavor release.

    Cook Sweet Potatoes: Heat 1 tablespoon of olive oil in a large skillet over medium heat. Introduce the diced sweet potatoes to the skillet, sprinkle with salt and pepper, and sauté them for about 8-10 minutes. Stir occasionally until they begin to soften and develop a slight golden color.
