1 lb ground turkey

1 medium onion, finely diced

3 cloves garlic, minced

1 red bell pepper, finely diced

2 cans (15 oz each) black beans, drained and rinsed

1 can (15 oz) corn, drained

1 can (28 oz) crushed tomatoes

2 tbsp tomato paste

2 cups chicken broth

1 tbsp chili powder

1 tsp ground cumin

1 tsp smoked paprika

½ tsp cayenne pepper (or to taste)

Salt and freshly ground black pepper, to taste

2 tbsp olive oil

Fresh cilantro, chopped (for garnish)

Slices of avocado (for serving)

Shredded cheese (optional, for serving)

Instructions
 

Sauté the Aromatics: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onion and sauté until it turns translucent, approximately 4–5 minutes. Incorporate the minced garlic and diced red bell pepper, continuing to sauté for another 2–3 minutes, until the mixture is fragrant and the pepper is softened.

    Brown the Turkey: Increase the heat to medium-high. Add the ground turkey to the pot and cook, breaking it apart with a spoon, until the meat is browned and no longer pink, roughly 5–7 minutes.

      Spice it Up: Once the turkey is cooked, add the chili powder, cumin, smoked paprika, cayenne pepper, salt, and black pepper. Stir thoroughly to coat the turkey and vegetables in the spice blend. Allow it to cook for an additional 1–2 minutes to meld the flavors together.

        Incorporate the Main Ingredients: Pour in the crushed tomatoes, tomato paste, black beans, corn, and chicken broth. Stir well to ensure that everything is combined evenly.

          Simmer the Chili: Bring the chili to a gentle boil. Once boiling, reduce the heat to low, cover the pot, and let it simmer for a minimum of 30 minutes. Stir occasionally to prevent sticking. For an even richer flavor, feel free to simmer for up to 1 hour.
