Ingredients

1 lb large shrimp, peeled and deveined

2 ripe avocados, diced

1 cup cherry tomatoes, halved

1 small red onion, finely chopped

1 cup corn (fresh or canned, drained if canned)

1/4 cup fresh cilantro, chopped

Juice of 1 lime

2 tablespoons olive oil

1 teaspoon garlic powder

Salt and black pepper to taste

Optional: 1 tablespoon hot sauce for an extra kick

Instructions

Prepare the Shrimp: In a large pot, bring water to a rolling boil. Carefully add the peeled and deveined shrimp and cook for approximately 3-4 minutes, or until they turn bright pink and opaque. Immediately drain them and set aside to cool. Once the shrimp are cool enough to handle, chop them into bite-sized pieces.

Mix the Dressing: In a small bowl, combine the fresh lime juice, olive oil, garlic powder, salt, black pepper, and hot sauce (if desired). Whisk everything together until well combined, and taste to adjust the seasoning if necessary.

Combine the Ingredients: In a large mixing bowl, gently mix together the cooked shrimp, diced avocados, halved cherry tomatoes, finely chopped red onion, corn, and chopped cilantro. Be careful not to mash the avocados as you mix.

Dress the Salad: Pour the prepared dressing over the shrimp and vegetable mixture. Using a spatula or large spoon, gently toss everything together until well-coated with the dressing.

Chill and Serve: Cover the bowl and refrigerate for about 15-20 minutes, allowing the flavors to meld together beautifully. Serve chilled or at room temperature for a bright and refreshing appetizer or light meal.
