Ingredients

1 lb large shrimp, peeled and deveined

1 cup fresh pineapple, diced (reserve some for garnish)

2 tablespoons soy sauce

2 tablespoons honey

1 tablespoon rice vinegar

1 tablespoon fresh lime juice

1 clove garlic, minced

1 teaspoon ginger, grated

1 tablespoon sesame oil

1/4 teaspoon red pepper flakes (optional, for a hint of spice)

1 head of butter lettuce or romaine, leaves gently separated

1/4 cup green onions, finely chopped

1/4 cup fresh cilantro, roughly chopped (plus extra for garnishing)

1/4 cup crushed peanuts or cashews (for a delightful crunch)

Lime wedges (for a zesty finish)

Instructions

Prepare the Pineapple Glaze: In a small saucepan, combine the diced pineapple, soy sauce, honey, rice vinegar, lime juice, minced garlic, grated ginger, and red pepper flakes over medium heat. Stir occasionally and bring the mixture to a gentle simmer. Allow it to cook for about 5-7 minutes until the pineapple softens and the sauce thickens. Once done, remove from heat and let it cool slightly.

Cook the Shrimp: In a large skillet, warm the sesame oil over medium-high heat. Once hot, add the peeled and deveined shrimp, ensuring they are spread out in a single layer. Season with salt and pepper to taste. Sauté the shrimp for 3-4 minutes, or until they turn pink and opaque, signifying they are fully cooked through.

Add the Glaze: Once the shrimp are cooked, pour half of the prepared pineapple glaze over them in the skillet. Toss gently to ensure each shrimp is well-coated with the glaze. Allow the shrimp to cook for an additional 2 minutes, then remove from heat.

Assemble the Wraps: Take a large lettuce leaf and spoon in a generous portion of the glazed shrimp. Top with finely chopped green onions, freshly chopped cilantro, and a sprinkle of crushed peanuts or cashews for added texture. For those who enjoy extra sweetness, drizzle a bit more of the pineapple glaze on top.

Serve: Arrange the assembled lettuce wraps on a serving platter, garnishing with the reserved diced pineapple and additional cilantro as desired. Serve with lime wedges on the side, allowing guests to squeeze fresh lime juice over their wraps for a bright, invigorating kick.
