1 pound large shrimp, peeled and deveined

2 tablespoons extra virgin olive oil

1 teaspoon smoked paprika

1 teaspoon ground cumin

1 teaspoon freshly squeezed lime juice

Sea salt and freshly cracked black pepper, to taste

8 skewers (use metal or wooden; if using wooden skewers, soak them in water for 30 minutes to prevent burning)

For the Mango Salsa:

1 ripe mango, diced into small cubes

1/2 medium red onion, finely chopped

1 jalapeño pepper, finely chopped (remove seeds for a milder flavor)

1/2 cup fresh cilantro, roughly chopped

Juice of 1 juicy lime

Sea salt, to taste

Marinate the Shrimp:

    In a large mixing bowl, whisk together the olive oil, minced garlic, smoked paprika, ground cumin, lime juice, sea salt, and black pepper until well combined. Add the cleaned shrimp to the bowl and gently toss until each shrimp is evenly coated with the marinade. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to infuse.

      Prepare the Mango Salsa:

        In a separate medium-sized bowl, combine the diced mango, chopped red onion, jalapeño, and cilantro. Squeeze in the lime juice and sprinkle a pinch of sea salt over the mixture.
