Ingredients

1 lb large shrimp, peeled and deveined

8 oz linguine or spaghetti

4 tablespoons unsalted butter, divided

4 tablespoons extra virgin olive oil, divided

5 cloves garlic, minced

1/2 cup dry white wine (like Sauvignon Blanc)

1 lemon, juiced and zested

1/4 teaspoon red pepper flakes (adjust to taste)

Salt and black pepper to taste

1/4 cup fresh parsley, finely chopped

1/2 cup cherry tomatoes, halved (optional)

Grated Parmesan cheese for serving (optional)

Instructions

Cook the Pasta: Fill a large pot with water, add a generous amount of salt, and bring it to a rolling boil. Add the linguine or spaghetti and cook according to the package instructions until al dente. Once cooked, drain the pasta, reserving about 1 cup of the starchy pasta water for later use. Set the pasta aside.

Sauté the Shrimp: In a large skillet over medium-high heat, combine 2 tablespoons of butter and 2 tablespoons of olive oil. Allow the butter to melt completely. Place the shrimp in the skillet in a single layer, taking care not to overcrowd. Season the shrimp with salt, black pepper, and red pepper flakes according to your preference. Cooking for 2-3 minutes on one side until they turn pink, then flip them over and cook for an additional 1-2 minutes until fully cooked. Once done, remove the shrimp from the skillet and set aside.

Make the Garlic Sauce: In the same skillet, add the remaining 2 tablespoons of olive oil and 2 tablespoons of butter. Once heated, introduce the minced garlic and sauté for about 1 minute or until fragrant, ensuring it does not burn.

Add Wine and Lemon: Carefully pour in the dry white wine, using a wooden spoon to scrape the bottom of the skillet to deglaze, releasing all the flavorful bits. Bring the mixture to a simmer and let it cook for 2-3 minutes, allowing the alcohol to evaporate. Stir in the fresh lemon juice and zest to infuse bright flavors.

Combine: Return the cooked shrimp to the skillet, followed by the drained pasta. Toss all the ingredients together, adding the reserved pasta water gradually until you achieve your desired sauce consistency. Gently fold in the chopped fresh parsley and halved cherry tomatoes if you choose to use them.

Serve: Taste the dish and adjust the seasonings with salt and pepper as needed. Serve the shrimp scampi hot, garnished with additional parsley and freshly grated Parmesan cheese, if desired. Dive into your delicious skillet garlic shrimp scampi and enjoy!
