Ingredients

1.5 lbs baby potatoes (choose either red or yellow), halved

3 tablespoons olive oil

1 tablespoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried dill

1 teaspoon salt (adjust to taste)

1/2 teaspoon freshly ground black pepper

1/4 cup ranch dressing (store-bought or homemade)

Fresh chives or parsley, finely chopped, for garnish (optional)

Instructions

Preheat the Oven: Set your oven to 425°F (220°C) to preheat. For easy cleanup later, line a large baking sheet with parchment paper.

Prepare the Potatoes: In a spacious mixing bowl, combine the halved baby potatoes with the olive oil. Using your hands or a spatula, toss the potatoes until they are thoroughly coated in the oil.

Add the Seasonings: Evenly sprinkle the smoked paprika, garlic powder, onion powder, dried dill, salt, and black pepper over the potatoes. Toss the mixture again until all the potatoes are nicely coated with the spices.

Spread on the Baking Sheet: Carefully arrange the seasoned potatoes cut side down in a single layer on the prepared baking sheet. This positioning helps achieve maximum crispiness during roasting.

Roast the Potatoes: Slide the baking sheet into the preheated oven and roast the potatoes for approximately 25-30 minutes. They should turn golden brown and become tender when pierced with a fork. For even results, stir the potatoes halfway through the roasting time.

Dress with Ranch: When the potatoes are ready, take the baking sheet out of the oven and allow them to cool for a couple of minutes. Drizzle the ranch dressing over the warm potatoes, then gently toss them to ensure every piece is deliciously coated.

Garnish and Serve: Transfer the ranch-roasted potatoes to a serving dish. If desired, sprinkle with freshly chopped chives or parsley for a touch of color and flavor. Enjoy these warm as a delightful side dish or tasty snack.
