Ingredients

2 large boneless, skinless chicken breasts

2 tablespoons olive oil

1 tablespoon chili powder

1 teaspoon ground cumin

1 teaspoon smoked paprika

1 teaspoon garlic powder

Salt and black pepper, to taste

4 large flour tortillas

1 cup romaine lettuce, finely chopped

1 cup cherry tomatoes, halved

½ cup black beans, rinsed and drained

½ cup corn (canned or cooked)

1 ripe avocado, sliced

1 cup shredded cheese (cheddar or a Mexican blend)

½ cup chipotle ranch dressing (or your preferred dressing)

Fresh cilantro, chopped, for garnish (optional)

Instructions

Marinate the Chicken: In a medium bowl, whisk together the olive oil, chili powder, ground cumin, smoked paprika, garlic powder, salt, and black pepper until well combined. Add the chicken breasts to the bowl, ensuring they are fully coated in the marinade. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes, allowing the flavors to infuse, or up to 2 hours for a richer taste.

Preheat the Grill: Heat your grill or grill pan to a medium-high setting. If you're using an outdoor grill, make sure the grates are clean and lightly oil them to prevent sticking.

Grill the Chicken: Once the grill is ready, take the chicken breasts out of the marinade and place them on the grill. Cook for approximately 6-7 minutes on each side, or until they reach an internal temperature of 165°F (75°C). After grilling, let the chicken rest for 5 minutes before slicing it into thin strips for easier wrapping.

Assemble the Wraps: Lay the flour tortillas flat on a clean surface. Begin by adding a generous layer of chopped romaine lettuce in the center of each tortilla. Follow with strips of the grilled chicken, halved cherry tomatoes, black beans, corn, avocado slices, and a hearty sprinkle of shredded cheese.

Add the Dressing: Drizzle the chipotle ranch dressing over the filling ingredients. If you’d like, scatter some freshly chopped cilantro on top for added freshness and flavor.

Wrap It Up: Fold the sides of each tortilla inward and then roll them tightly from the bottom up, encasing all the delicious fillings securely. Press gently to seal the wraps.

Optional Grilling: For an extra layer of flavor, place the assembled wraps back on the grill for an additional 2-3 minutes on each side. This will give them nice grill marks and warm them through. Gently press down with a spatula while grilling.

Serve: Slice each wrap diagonally in half and serve on a platter. For an added touch, include a small bowl of chipotle ranch dressing on the side for dipping. Enjoy your flavorful Southwest Grilled Chicken Wraps!
