1 medium zucchini, diced

1 red bell pepper, diced

1 small red onion, diced

1 cup cherry tomatoes, halved

2 tablespoons olive oil

1 teaspoon ground cumin

1 teaspoon chili powder

½ teaspoon cayenne pepper (adjust to your heat preference)

Salt and black pepper to taste

8 small corn or flour tortillas

½ cup fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

½ cup avocado or guacamole (optional)

¼ cup crumbled feta cheese (optional)

Instructions
 

Preheat the Grill: If using a gas grill, set it to medium-high heat. For stovetop grilling, preheat a grill pan over medium-high heat until hot.
