Spicy Jalapeño Ranch Chicken

4 boneless, skinless chicken breasts

1 cup buttermilk

1 packet ranch seasoning mix

3 fresh jalapeños, finely chopped (remove seeds for milder flavor)

1 cup panko breadcrumbs

1 cup shredded cheddar cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

½ teaspoon cayenne pepper (optional for added heat)

Salt and pepper to taste

Olive oil spray or any cooking oil for greasing

In a large mixing bowl, whisk together the buttermilk and ranch seasoning mix until they are fully blended. Stir in the finely chopped jalapeños. Add the chicken breasts to the mixture, ensuring that they are fully immersed in the marinade. Cover the bowl with plastic wrap and refrigerate for a minimum of 1 hour, or ideally overnight to maximize flavor infusion.

    Preheat your oven to 400°F (200°C) and prepare a baking sheet by lining it with parchment paper to prevent sticking.

      In a separate bowl, combine the panko breadcrumbs, shredded cheddar cheese, garlic powder, onion powder, smoked paprika, cayenne pepper (if you’re looking for a spicy kick), and a generous pinch of salt and pepper. Mix these ingredients thoroughly to create an even coating.

        Once the chicken has marinated, take it out of the refrigerator. Gently shake off any excess marinade from each breast, then roll them in the breadcrumb mixture, pressing down firmly to make sure the breadcrumbs adhere well to the chicken.

          Arrange the coated chicken breasts on the prepared baking sheet. For optimal browning, lightly spray the tops with olive oil.

            Place the baking sheet in the preheated oven and bake for 25-30 minutes, or until the chicken is cooked through (reaching an internal temperature of 165°F/74°C) and the breadcrumb coating is a beautiful golden brown and crispy.

              Once cooked, remove the chicken from the oven and let it rest for a few minutes to allow the juices to redistribute before slicing. Serve the chicken hot, alongside extra jalapeño ranch dressing, fresh vegetables, or your choice of delicious side dishes.
