1 can (15 oz) chickpeas, drained and rinsed

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon ground cumin

Freshly cracked black pepper, to taste

4 large whole wheat or spinach tortillas

1 cup fresh spinach leaves

1 ripe avocado, sliced

1 medium tomato, diced

¼ cup plain Greek yogurt or a dairy-free alternative

Juice of 1 lime

Optional toppings: sliced jalapeños, fresh cilantro, or crumbled feta cheese
