For the Meatballs:

1 lb ground turkey

1/2 cup whole wheat breadcrumbs

1/4 cup grated Parmesan cheese

1/4 cup fresh cilantro, chopped (or parsley)

2-3 cloves garlic, finely minced

1 large egg

2-3 tbsp Sriracha sauce (adjust for desired spice level)

1 tsp salt

1/2 tsp black pepper

1 tsp smoked paprika

1/2 tsp ground cumin

For the Sauce:

1/4 cup Greek yogurt

2 tbsp mayonnaise

1-2 tbsp Sriracha sauce

1 tbsp fresh lime juice

Pinch of salt

For Assembly:

4 whole wheat pitas

1 cup shredded lettuce

1 cup diced tomatoes

1/2 cup cucumber, sliced

Fresh cilantro leaves for garnish (optional)

Instructions

Preheat the Oven: Begin by preheating your oven to 400°F (200°C). Prepare a baking sheet by lining it with parchment paper for easy cleanup.

Prepare the Meatball Mixture: In a large mixing bowl, thoroughly combine the ground turkey, whole wheat breadcrumbs, grated Parmesan cheese, chopped fresh cilantro, minced garlic, egg, Sriracha sauce, salt, black pepper, smoked paprika, and ground cumin. Mix the ingredients gently until just incorporated; avoid overmixing to ensure the meatballs remain tender.

Shape the Meatballs: With clean hands, scoop out portions of the meat mixture and roll them into small meatballs, approximately 1.5 inches in diameter. Place the formed meatballs on the prepared baking sheet with space between each for even cooking.

Bake the Meatballs: Cook the meatballs in the preheated oven for about 18-20 minutes, or until they are fully cooked and golden brown on the outside. Use a meat thermometer to check that they've reached an internal temperature of 165°F (74°C).

Make the Sauce: While the meatballs bake, prepare the sauce by whisking together Greek yogurt, mayonnaise, Sriracha sauce, lime juice, and a pinch of salt in a small bowl. Taste and adjust the Sriracha according to your spice preference.

Warm the Pitas: A few minutes before the meatballs finish baking, warm the whole wheat pitas in the oven for approximately 3-5 minutes, or lightly toast them in a skillet over medium heat until warm and slightly crispy.

Assemble the Pitas: Remove the meatballs from the oven once they are done. To assemble each pita, carefully open it and add a few meatballs inside, followed by a handful of shredded lettuce, diced tomatoes, and cucumber slices. Drizzle with the prepared Sriracha sauce, and if desired, top with a sprinkle of fresh cilantro.

Serve: Serve your Spicy Sriracha Turkey Meatball Pitas while warm. Feel free to add some extra cilantro for garnish, and enjoy this flavorful meal!
